🍃 From the Frost-Touched Hills of Sayama
Most people think of Kyoto when they hear “matcha,” but far to the north, in the frost-touched hills of Saitama, lies Sayama, a region known for its deep, lingering flavour. The harsh winters here force tea plants to grow thicker leaves, packed with sweetness and body. This unique character earned Sayama its place among Japan’s “three famous teas” and inspired the saying:
“The colour of Shizuoka, the aroma of Uji, the flavour of Sayama.”
🔥 Crafted at Asuka, Kanto’s First Full-Scale Matcha Factory
At the heart of Sayama is Asuka, a small collective of tea gardens established in 2006. Its pride is a twelve-metre-tall Tencha furnace, a rare sight even in Japan. Freshly steamed leaves are lifted through warm air in slow, repeated stages of drying, preserving their vivid green hue and drawing out Sayama’s nutty, rich depth.
Because Asuka oversees every step, from field to furnace, the matcha retains its true character and freshness in every sip.
