Tianhao Estate sits in the mountains of Lancang County, southwestern Yunnan, where cool nights and warm days slowly concentrate sugars deep into the cherry. The anaerobic natural process takes full advantage of this. Cherries are sealed and fermented slowly in their own juices before being dried whole, unlocking extraordinary depth and complexity.
Getting the roast right on this one took patience. Anaerobic naturals carry a lot of intensity, and finding the sweet spot at medium-light took several attempts. We extended the development phase carefully until the sweetness came through clean and the fruit opened up without losing clarity. The extra effort was worth it, this is one of the most rewarding cups we have produced, and we are proud to finally introduce a China origin to our line-up.
